1. Multi Millet Poha
Preparation Time: 5–7 minutes
How to Cook:
Gently rinse the millet poha in a strainer with water for a few seconds (do not soak too long). Let it drain.
Heat a little oil in a pan, add mustard seeds, curry leaves, green chilies, and chopped onions. Sauté until translucent.
Add turmeric powder, salt to taste, and optional vegetables like peas or potatoes.
Toss in the drained millet poha, mix well, cover, and cook on low heat for 2–3 minutes.
Garnish with fresh coriander and a squeeze of lemon juice before serving.
2. Multi Millet Vermicelli (Sevai)
Preparation Time: 8–10 minutes
How to Cook:
Boil 3 cups of water with a few drops of oil and a pinch of salt.
Add the millet vermicelli to the boiling water and cook for 4–5 minutes until soft yet firm (avoid overcooking). Drain excess water.
For savory Upma: Sauté mustard seeds, onions, and vegetables in a pan, then gently fold in the boiled vermicelli.
For a sweet version: Toss with jaggery/sugar, cardamom powder, and roasted nuts in a bit of ghee.
3. Multi Millet Daliya
Preparation Time: 12–15 minutes
How to Cook:
Dry roast the millet daliya lightly in a pan for 2 minutes to enhance the aroma (optional).
For a savory porridge (Khichdi): Pressure cook 1 part daliya with 3 to 4 parts water/dal and vegetables for 3 whistles on medium heat.
For a sweet porridge: Boil 1 part daliya in milk or water until tender, then sweeten with jaggery, honey, or sugar, and top with dry fruits.
