Desi Khand is a type of sugar made from sugarcane that is less processed than white sugar and retains some of the natural molasses and minerals present in sugarcane juice. It is also known as Khandsari or raw unrefined sugar. To prepare desi khand, cane extract is heated, and the remaining liquid is allowed to evaporate until the sugar residue remains. Desi Khand is traditionally made in India without any chemical process.
