We start by choosing clean and mature groundnuts also known as peanuts. These are lightly roasted to bring out a natural nutty aroma.Then we crush the groundnuts using a traditional lakdi ghana or wood pressed machine. It moves slowly and gently without using heat. This process is called kacchi ghani and it helps keep all the important nutrients flavor and natural color of the oil.The oil is collected by hand, filtered through a cotton cloth and stored in clean glass containers.
